The 1UP is very useful indeed. These little icons that look like Kirby give him one whole extra life! Which means he can run out of health an extra time before getting a Game Over. Sometimes they will only be represented by a symbol that displays the text "1UP" instead of a Kirby icon.
These items are occasionally found in levels, but more commonly they're rewards in various Mini-Games. Generally, the better Kirby performs, the more 1UPs he'll get- usually ranging from none to three total.
There are many other ways to get 1UPs, however. One way is to collect Star Pieces, or Kirby Bubbles, depending on the game.
In rare cases when you play as a character other than Kirby- such as Meta Knight in Kirby: Nightmare in Dream Land, the 1UPs will look like that character instead of Kirby.
